If you’ve got a large jar lying around the house, this Burrito jar is perfect to change things up with your cooking. If not, they’re easy to pick up in most supermarkets.
If you want to prep a few of these for the days ahead or the rest of the family, just multiply the ingredients with the servings you want to create ~ as always, if you do try this recipe out, let us know by commenting below or over on our Facebook Page, enjoy ?
100g Chicken Fillets (We used shredded chicken that was slow cooked the day previous, but you can use any style of cooked chicken here you like)
60g Mild Salsa
50g Pinto Beans
30g Tinned Sweetcorn
30g Microwave Mexican Rice
A squeeze of a Lime
50g Red Bell Pepper
1/3rd Head of Romaine Lettuce
30g Light Cheddar Cheese
30g Lighter than light Mayo
2/3 Tsp Fajita Seasoning
Pop the Pinto beans & Mexican rice in the microwave to start as per package guidelines to soften these up so they mix well.
Start the Jar by layering first with the Salsa then layer as follows;
Squeeze the lime on top of the above
Then Add your Pepper/Tomatoes/ Avocado/Lettuce & Cheese in that order.
Make your sauce on the side by using the mayo and seasoning to keep this for later use. (The jar we used had a container for this, you may need a separate container to bring to lunch for example)
Serve on a plate when ready to eat or eat it straight from the jar if you’re on the go. (We recommend the plate though as it’s less messy.)
PRO-TIP: If you’re making it to eat it right now, you won’t need the jar for obvious reasons!
