Greek Yogurt Protein Pancakes

Looking for a different twist to Protein Pancakes that don’t taste like cardboard? Just be careful when you’re cooking these and you’re on a winner!

*Per Pancake

INGREDIENTS

  • x3 Medium Eggs
  • 30g Vanilla Whey Protein Powder
  • 100g 0% Fat Greek Y0gurt
  • 65 Oat Flour (or blended Instant Oats which is what we used for this recipe)
  • 2 Tbsp Honey or Maple Syrup
  • 1 Calorie Spray for Cooking

DIRECTIONS

  1. Blend your Instant Oats if you don’t have Oat Flour.
  2. In a bowl, whisk your eggs, yogurt & honey. Then, add the oat flour and protein powder stirring until combined.
  3. Preheat your pan (non-stick preferably!) on medium heat. Spray 8-10 sprays of the cooking spray and pour the batter depending on the size you want them. (for this recipe, they are about 2-3 Tbsp in size to make 12-13 pancakes – see the video below for sizing)
  4. Cook for less than a minute & flip if or when bubbles appear but the batter is still wet. Don’t wait for them to get brown!
  5. Cook for literally 10 seconds & flip if needed 1-2 more times and they’re ready. (If you go beyond this, you’ll dry them out too much)
  6. Serve when done, adding whatever you love with the pancakes 🙂
