Slow Cooker Spanish Chicken

If you’re coming into a busy week at work and just want tasty comfort style meals prepared for lunch or you’re cooking dinner for the family later that evening, this slow cooker recipe will fill those needs.

You can eat it as is or add your own carb source – that’s the beauty of these recipes, they’re meant to adapt to your preferences and your goals. Plus, if you don’t have a slow cooker yet, this will give you an excuse to get one 😉 Enjoy!

Prep Time: 10Min | Cook Time: 8Hrs or 4Hrs | Serves: 4


Calories: 302 k/cal | Protein: 47g | Carbs: 19g | Fat: 3.8g


  • 700g Chicken Fillets
  • 1 Can Chopped Tomatoes
  • 1 Large Onion
  • 1 Green Pepper
  • 3 Cloves of Garlic
  • 1 Tsp. Rock Salt
  • 1/2 Tsp. Black Pepper
  • 1 Tbsp. Red Chilli powder
  • 1/2 Tsp. Cumin
  • 2 Cups Chicken Stock
  • 1 Can Red Kidney Beans (Rinse these well before adding)


  1. Slice Chicken into chunks & Chop Pepper/Onion/Garlic
  2. Add chopped tomatoes to slow cooker followed by adding;
    • Onion
    • Pepper
    • Garlic
    • Cumin/Chilli/Pepper/Salt
  3. Add the chicken followed by 2 cups of stock & give it a big mix
  4. Leave for 8 hours on low or 4 hours for high
  5. In the final 30 minutes of cooking, add the kidney beans
  6. Mix one last time, and serve when done 🙂
