Slow Cooker Chicken Chickpea

Another high protein, low-calorie recipe that’s super easy to make while life get’s in the way, get out the slow cooker, pop everything in and check back 8 hours later.


Prep Time: 10-15Min | Cook Time: 8Hrs or 4Hrs | Serves: 4


CALORIES & MACROS

Calories: 311 k/cal | Protein: 41.5g | Carbs: 22g | Fat: 6.6g

INGREDIENTS

  • 600g Chicken Fillets
  • 200g Tinned Chickpeas
  • 150g Carrots
  • 1 Can Chopped Tomatoes
  • 1 Medium-Large Onion
  • 1 Red Bell Pepper
  • 3-4 Cloves of Garlic
  • 1/4-1/2 Tsp. Rock Salt
  • 1/4-1/2 Tsp. Black Pepper
  • 1/4 Tsp. Turmeric
  • 1/2 Tsp. Cumin 
  • 1 Tsp. Smoked Paprika
  • 1 Tbsp. Olive Oil
  • 1 Cup Chicken Stock

DIRECTIONS

  1. Slice Chicken into chunks & Chop/Prep everything else (Pepper/Onion/Garlic etc.)
  2. Add chopped tomatoes to slow cooker followed by adding;
    • Onion
    • Pepper
    • Carrots
    • Garlic
    • Cumin/Paprika/Pepper/Salt/Turmeric
    • Olive Oil
  3. Add the chicken followed by the stock & give it a big mix
  4. Leave for 8 hours on low or 4 hours for high
  5. In the final 20-30 minutes of cooking, add the Chickpeas
  6. Mix one last time, and serve when done 🙂
    • OR – Serve with whatever Carb Source you like!
