Slice Chicken into chunks & Chop/Prep everything else (Pepper/Onion/Garlic etc.)
Add chopped tomatoes to slow cooker followed by adding;
Add the chicken followed by the stock & give it a big mix
Leave for 8 hours on low or 4 hours for high
In the final 20-30 minutes of cooking, add the Chickpeas
Mix one last time, and serve when done 🙂
OR – Serve with whatever Carb Source you like!
